Chocolate Chocolate Chip Gluten Free Cookies with Whey Protein

I finally decided to experiment with a gluten free flour mix and baking with whey protein powder this week. I must say, it turned out well and has me looking forward to experimenting with this convenient combo!

Chocolate chocolate chip gluten free cookies with extra protein!

  • 8 oz salted butter softened
  • 2 eggs
  • 1 cup packed brown sugar
  • 1 teaspoon vanilla
  • 4 tablespoons molasses
  • 1 cup unsweetened whey protein powder
  • 1/2 cup 100% cacao banking cocoa
  • 1 and 1/4 cup gluten free flour blend . I used Namaste brand
  • 1 & 1/2 cups chocolate chips

Preheat oven to 375º
Mix your wet ingredients and brown sugar. Add cocoa powder and mix in. Then mix in your whey. Add the gluten free flour and mix well. Add your chips last.

Place large globs, around 1/3 cup or more on a cookie tray. You should be able to fit about 12 on a standard baking sheet for a total of 30 cookies per batch.

Bake ar 375º for about 12 minutes give or take for preference.
Let cool before removing from sheet.

I know some people have fancy cooling racks or whatnot, but we just lay baked goods on a paper grocery bag for cooling.
These cookies are great since they contain far less sugar and starch than a typical gluten  free cookie, and much more protein. This greatly reduces the glycemic load of the cookie, which is good for people dealing with insulin resistance or unstable blood sugar. Everyone likes a treat once in a while and these really do taste like a treat!
