Tzatziki Cucumber Dressing Recipe
- 2 cups finely chopped cucumber
- 1 ½ cups plain Greek yogurt
- 1/2 teaspoon dried garlic granules
- 1/4 of a fresh lime
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh dill
- pinch of salt
You can finely chop your cucumber of use a cheese grater to shred it. Or even use a food process to pulse it. Just so long as it is pretty finely mechanicalized when you are finished. You can leave the skin and seeds in there too. They add to the flavour. Then place your cucumber in a mesh strainer and firmly press down on the top to squeeze most of the water out through the mesh.
Place your cucumber in a bowl and add the yogurt, garlic, oil, dill, and salt. Squeeze the lime wedge over it and mix it all together thoroughly. Let it rest for about an hour in the fridge to let the garlic and dill really flavour the dressing.

The Tzatziki Cucumber Dressing should be fine in the fridge for about three days. It might be fine longer, but I find homemade dressing gets funky more quickly.
I really love to serve this over grilled chicken in a spinach salad. Or just have it as a dip for the veggies with the kids. Of course you can be an overachiever and make gyros. And then you should invite me over, since I love gyros, but never make them.
