Cheery Cherry Oatmeal Muffins

Ch ch ch ch cherry bomb! I love this season.
And everyone loves cherry cobbler and cherry crisp. However, I don’t always want to give my kids quite that much sugar, so I reached a compromise with cherry oatmeal muffins. All the cherries and oats of the cherry crisp, with less sugar and butter. Happy kids and happy mom.
All right so let’s get ready to rock. (Because they are stone fruit, get it? Nerd alert!)

Cheery Cherry Oatmeal Muffins

  • 1 1/4 cups all-purpose flour
  • 1 cup steel cut oats
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 3/4 cup milk
  • 1/2 cup olive oil
  • 1 egg
  • 2 cups fresh pitted and halved fresh cherries
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • Optional 1/2 cup chopped walnuts

 




Preheat oven to 350 degrees F.
In a large bowl, sift together the flour, baking powder, spices, and salt. In a separate bowl, cream together sugar, egg, oil, and milk. Add oats to wet mixture and let sit five minutes. Stir the flour mixture into the wet mixture. Fold in the cherries. Pour batter into prepared muffin pans. (Either paper liners or greased pan cups. If using a metal pan, I suggest liners.) Bake in preheated oven for 25-30 minutes, until a toothpick inserted into the center of a muffin comes out clean. Makes 12.

I find an oat muffin plus a hard-boiled egg makes a decent kid breakfast. You might get five whole minutes before they ask for a snack as opposed to five seconds. Maybe.
