It seems like we are constantly prepping for a party, or brainstorming our next party these days. Between four kids’ worth of birthday bashes, then holidays, summer barbecues, and get-togethors just because, there is always something I need to cater. I started experimenting with coming up with easy party food because really, not that many people appreciate the fancy stuff anyway. Don’t waste the energy! Go simple! Plus, the kids are more open to anything smothered in sweet sauce.

Slow Cooker Barbecue Meatballs

  • 2 lbs ground beef (93%)
  • 4 eggs
  • 2 tablespoons minced dried onions
  • 1 tablespoon powdered garlic
  • 2 teaspoons salt
  • 1 tablespoon crushed red pepper
  • 2 tablespoons dried basil
  • 1/2 cup tapioca starch
  • 1.5 cups bbq sauce

Place all ingredients minus the barbecue sauce, in a large bowl and mix them by hand until intermixed thoroughly.  Roll into 18 balls (about 2 inches diameter). Brown the meatballs in a frying pan on medium heat until they are browned enough to hold together well. Transfer meatballs to a slow cooker (Crock pot). Add 1 cup of your favorite barbecue sauce,  plus a half cup of water. Cover slow cooker and turn to high for two hours. Gently stir meatballs and turn to low for two or more hours. You can add another half cup of water if you need to.

These meatballs are pretty big with the intention of using two as an entire serving. However, you could make them much smaller and serve them with toothpicks at a party. You can brown them the night before and start the slow cooker the day of your party for easy prep.
