Spinach Pepper Salad with Grilled Chicken

Are you tired of Summer cooking yet? Of course not! The June rain storms are just clearing up!

Right now, the only thing really thriving in our garden is spinach , so we have had an awful lot of salads. Since salads are one of my favorite meals, no problem. At least we can still take advantage of summer grilling and outdoor dining.

We are a spicy household, so just about every meal has a peppery element. In fact, we have about 20 pepper plants out in the garden right now. I love mixing fresh and jarred peppers for a variety of flavors and textures. If you think healthy meals are dull, you need more flavor! Let’s Eat.

Spinach Pepper Salad with Grilled Chicken

  • 3 Cups fresh chopped spinach
  • 2 grilled chicken breasts
  • 1 red bell pepper large chopped
  • 1 can cannelloni beans beans (white navy)
  • 1 can black olives pitted
  • 1/2 cup green stuffed olives
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon crushed dried red pepper flakes
  • 1 jar Mezzetta Golden Greek Peperoncini drained
  • 1/2 cup shredded cheese

Heat up your grill and place your thawed chicken breasts on the rack. Grill on medium flame for about 8 minutes on each side. While that is going on, chop your spinach and red pepper. Toss in a bowl with your cannelloni beans and olives. Once chicken is cooked through, let it sit five minutes, then slice thin and add to salad. Give salad bowl  a light toss. Add oil, vinegar, pepper flakes, Golden Greek Peperoncini drained, and cheese. Toss with salad tongs/spoons. Serve!

If you don’t like the whole Golden Greek Peperoncini peppers with stems, you can use the sliced peppers instead. I like the pop of juice that comes out of the whole ones, but some people don’t like having stems on their plate. This can be a large meal for two, or a lighter meal for four, depending on the size of your chicken breasts.

For a different flare, try a marinated vegetable salad and add Mezzetta peppers with spicy sausage.
